While ramen is all the rage, only a few rise to the level of this delicious hot spot. Not only are this chef's versions myriad, his approach is personal and especially slurpable. The hot variety (Chaplin A.S.S.) arrives with gloriously tender slabs of chicken and a sweltering broth; while the cold version, with springy noodles, zesty ginger and cool cucumber, is equally gratifying.
