Gerard Wollerich is an established name in Dutch gastronomy. In 1996 he took this stately notary's house, with its stylish decor and serene terrace that do full justice to this beautiful setting, and turned it into a mecca for foodies. As soon as you enter, you get a growing sense that a special experience awaits you.
Chef Wollerich melds experience with curiosity and craftsmanship. His madeira sauce lends the perfectly medium-rare roast fillet of beef extra depth and makes for an intense contrast of flavours. Equally impressive is his beetroot-based dish (a completely vegetarian set menu is available). Elaborately prepared over 28 to 32 days, the vegetable is combined with ingredients including hazelnut and a red wine sauce in an inventive signature dish that demonstrates his never-ending desire to evolve. He is as happy to experiment with traditional rich flavours as he is with original textures and fresh acidity. His nose for quality produce, preferably local, is another of his strengths. This is a chef whose passion and energy never cease to amaze.
