Next, wild mushroom al ajillo tacos deliver an earthy umami cut with the spice of habanero ash. Even the tortillas are far from standard, imparting a simple but satisfying corn flavor. Tender bone-in achiote chicken over green Calasparra rice with brown butter mustard is lush, creamy and packed with flavor.
