The chef uses vegetables from his own kitchen garden alongside other Dutch delicacies in his sophisticated creations, finishing a frothy oyster beurre blanc with lemongrass, for example, or enhancing a pumpkin sauce by adding vegetable kimchi. His cuisine has a fun and playful feel yet is also full of strong flavours. And rest assured, this skilful chef is also a master of more classic techniques, preparing dishes such as sea bass in a salt crust with the same culinary flair.
Although fun takes centre stage at ’t Amsterdammertje, the restaurant also maintains a highly professional approach. The restaurant’s delicatessen, Marché, is also well worth a visit.
