Chef Tim Ma may have classic culinary training, but it's when he lets his roots come out to play that his talent truly shines. American Son is his love letter to his parents who immigrated from Taiwan and settled in Arkansas. It's cuisine is also deeply personal; even the menu has a copy of the heartfelt, handwritten letter. While it's part of a hotel and co-working space, the menu reads unlike anything else in the city. Tofu "gnocchi" flies in the face of tradition; instead offering a deep umami flavor with white miso and trumpet mushrooms. Then there is the brilliant and refreshing gazpacho, with its potent charred-cucumber flavor, or the buttery-delicious Anson Mills grits with corn. Blackout cake with Vietnamese coffee cream is a winner.
