Today, his son Emilio and chef Sil Springorum continue the legacy, reinforcing its stellar reputation with a refined wine list and a set menu that brings a modern edge to classic Italian flavours. Here you might be tempted by a perfectly cooked piece of turbot with salted lemon and a beurre blanc made with Franciacorta sparkling wine, or ravioli filled with potato purée and Taleggio, finished with a sauce combining veal jus, foie gras, apple syrup and hazelnuts.
