Gaggen takes its name from the syllables Ga (雅) and Gen (元), drawn from the surnames of the husband-and-wife chef duo, Hyunah Choi and Jinhee Won — both of whom trained at renowned Japanese restaurants Kanda and Kurogi. Their cuisine is defined by an elegant articulation of Japanese seasonality, expressed through uncommon preparations such as hand-pulled somen learned at Kurogi, freshly ground sesame that heightens its aroma, and warabi-mochi made from bracken starch. Dinner begins promptly at 7 p.m. for all guests, with each course presented directly in front of them for a deeply immersive experience that highlights the chefs’ craftsmanship. Thoughtful explanations from the chefs and warm, attentive hospitality further elevate the overall dining journey.
