The Michelin Guide's review
In a quiet and secluded location, inside the Biohotel Hermitage, the restaurant occupies an early twentieth-century stube: a wooden treasure chest with few tables, where you can be lulled into an evening of romance and haute cuisine, offered through various tasting menus. There’s one dedicated to freshwater fish, naturally one inspired by the high mountains with ingredients such as roe deer, wild garlic, alpine butter, horseradish, honey... and, surprisingly, one dedicated to the sea, concluding with an interesting vegetarian menu. Also noteworthy is a fine selection of cheeses (not exclusively local). Elegance here is the rule and will envelop you, from the well-presented dishes to the atmosphere.
