Don’t be misled by the unassuming façade of Nonbe Daigaku, tucked away between Cambre wood and the Free University of Brussels, it hides a snug Japanese eatery oozing in character. The chef, who cheerfully waves at diners from behind his counter, reverently respects tradition and the ingredient. Everything, from sashimi of salmon or warm chawanmushi of shrimp and asparagus to tuna sushi prepared to order, bears witness to his consummate technique and passion for authenticity. Something of a culinary landmark courtesy of its long-established position, it has added a soupçon of Japanese serenity to the Belgian capital. Foodies flock here for the wide-ranging à la carte lineup and omakase menu. Don’t forget to book.
