The creak of ancient wooden floors welcomes guests to this 17th‑century mill, where chef‑owner Alessandro Gilmozzi – an authentic alpine guide in the world of gastronomy – expresses his deep love for the mountains through a single tasting menu (also available in a slightly shorter version). On the table, freshly executed smoking techniques, an extraordinary use of local herbs, barks, lichens, and resins are combined with rare cheeses, intensely flavored game, and freshwater fish, all interpreted with creativity and distinctive cooking methods. The wine list is equally thoughtful, with interesting selections also available by the glass.
