The chef, who previously cooked Western food, eventually transitioned to Korean cuisine. He says that he now cooks with the joy of someone wearing a perfectly tailored suit. That ease is reflected in his cooking: elegant plating, inventive recipes, and refined Korean dishes such as gomtang simmered for 48 hours and rice cooked in a traditional pot. A small bowl of gomtang for children is also available, making it a family-friendly dining option.
