A fine arts student in a former life, chef Mathieu Lacaze takes great care over the presentation of his dishes. His artistic sensibility shines through in his resolutely modern market-fresh cuisine. In keeping with the seasons, his dishes are prepared using quality local ingredients selected from organic market gardeners and small-scale livestock farmers.
